This dressing is inspired by Chef Castro’s love for mild curry sauce which is a Jamaican curry blend which is said to be softer than your typical curry flavours. This curry dressing is well-known for its vanilla bean taste with roots that travel back to Madagascar. 
 
Chef Castro’s favourite combination of sweet vanilla and hints of curry is a delicacy in his cuisine, and he suggests that this dressing is a perfect addition for any and all seafood dishes. Other great pairings are with the curry vanilla poached prawns and avocado, mixed greens with fresh mangoes, and young coconut and raspberries.
