Israel Álvarez Molina is the chef and owner of MAiiZ Nixtamal in Victoria’s Historic Chinatown. His career includes five years at Pujol in Mexico City, where he served as Chef de Cuisine under Enrique Olvera. Based in Canada since 2008, he founded MAiiZ in 2020 with nixtamal at its heart. Working with organic BC corn, nixtamalized in-house and ground on volcanic stones, his cooking brings Mexican culinary traditions into conversation with the ingredients of his Canadian home.
