Chef Israel Alvarez Molina of MAiiZ Nixtamal is a passionate keeper of heritage and flavour. Born and raised in Mexico, Israel brings a piece of home to every tortilla he makes honoring the ancient tradition of nixtamalization and sharing its magic with his community. At MAiiZ, he transforms Canadian-grown corn into soft, fragrant tortillas that carry stories of heritage, heart, and belonging.
