While our uniquely designed menus introduce many to the flavours of West Africa, Caribbean & Pacific Northwest Cuisine, our culinary team also takes inspiration from local, seasonal ingredients when crafting new dishes. This intentional action extends beyond celebrating the bounty and beauty of the region, but it creates an opportunity for us to build community through getting to know and support our farmers, fishers, foragers, winemakers, brewers, distillers and bakers.
